“KOMATSUNA Curry”:Reusing of non-standard vegetables

Loss of edible ingredients that cannot be released is a familiar issue these days.
This is an attempt that we purchase such ingredients directly from farms, and turn them into our lunch menu.
The ingredient we decided to pick up is organic KOMATSUNA grown in Kamos farm in Kasama, Ibaraki.
When we visited them, we saw piles and piles of peeled its outer leaves that had been disposed in order to meet
shipping standards.
The outer leaves are disposed because they may change color during shipping or to make them same size.
However, they absorb plenty of sunlight, and have rich flavor, in fact, it’s the best part of KOMATSUNA.
Therefore, we decided to purchase them at a reasonable price and make them into a dish.
We take this attempt to sincerely think about food loss.
