“KAWAMATA-wild chicken consommé”:Reusing of multiparous chickens
We offer a consommé made with multiparous chickens, which are no longer laying eggs and discarded as they are,
as our signature menu.
Chicken oil is made from the chicken skin, the meat is minced, and the bones are roasted and added into the broth.
We do not use any of the flavored vegetables or egg whites that are usually used in making it in order to let you fully experience the rich Umami of the chicken. We use only chicken, water, and salt.
The meat is hard though, the chicken is full of Umami, and this dish brings the best in it.
We believe that one of our roles is to spot light on overlooked ingredients, find new way to use them,
and create up them to delicious dishes.
