Food that is perfectly edible but cannot be sold has become a familiar part of the conversation around food waste.

“RE: Lunch” gives these ingredients a new life by sourcing them directly from producers and transforming them into a lunch menu.

This month, we are serving a Komatsuna Hamburg Steak, made with komatsuna greens and meat trimmings from our kitchen preparations.

The fresh aroma of komatsuna complements the rich, savory flavor of the minced meat.
