RE: Lunch Wed September 30

Food loss from ingredients that are perfectly good to eat but cannot be sold is an issue that has become increasingly familiar in recent years.

RE: Lunch is our initiative to give these ingredients a new life. We source them directly from producers and transform them into a new lunch dish.

This time, we are serving Komatsuna Bolognese, made with komatsuna (Japanese mustard spinach) and meat trimmings from our kitchen.

The rich umami of the meat is balanced by the fresh, vibrant character of the komatsuna.
