Food loss from ingredients that are perfectly edible but cannot be shipped or sold has become an increasingly familiar issue.

At TROIS VISAGES, we source these ingredients directly from producers and give them new life through our “RE: Lunch” initiative.

This time, we present Komatsuna Bolognese, made with komatsuna (Japanese mustard spinach) and meat trimmings from our kitchen preparations.
The rich umami of the minced meat is complemented by the fresh, vibrant aroma of komatsuna.
