Food that is perfectly good to eat but cannot be shipped often goes to waste—a challenge that has become increasingly familiar in recent years.

RE: Lunch is built on the idea of giving these ingredients a second life. By sourcing surplus and off-spec produce directly from local farmers, along with ingredients generated during our own preparation, we transform them into a seasonal lunch.

This edition features a Komatsuna Bolognese, made with fresh komatsuna greens and carefully prepared meat trimmings from our kitchen. The rich savoriness of the meat is lifted by the clean, vibrant aroma of the komatsuna.
