RE: Lunch
Food loss from ingredients that are perfectly edible but unable to be shipped has become an increasingly familiar topic in recent years.
The concept behind “RE: Lunch” (Rebirth) is to source such ingredients directly from producers and transform them into a lunch menu in a new way.
This time, we feature a Komatsuna mille-feuille made with organic komatsuna and meat trimmings from our daily preparations.
Served with a generous pour of hot chicken consommé rich in umami, accompanied by a komatsuna risotto.
