Food loss — ingredients that are perfectly edible yet unable to be shipped — has become a familiar topic in recent years.
“RE: Lunch” is built on the concept of giving new life to such ingredients by sourcing them directly from producers and presenting them as a lunch menu.

This time, we offer a Komatsuna Croquette made with organic komatsuna and meat trimmings from our kitchen preparations.
Served with pieces of our well-loved house-made bread, which we do not usually offer.
