Food loss—ingredients that are perfectly edible yet cannot be shipped—has become a familiar issue in recent years.
“RE: Lunch” (Re:Generation) was created with the idea of sourcing such ingredients directly from producers and transforming them into a thoughtful lunch menu.
Following the previous edition, we present a green macaroni gratin made with organic komatsuna greens, layered with the rich umami of meat trimmings from our kitchen preparations.
It is served with toasted ends of our house-made bread, a guest favorite that is not usually offered.
