RE: Lunch — Held on Wednesday, November 26
In recent years, we have increasingly heard about the issue of food loss—ingredients that are perfectly edible yet cannot be shipped due to strict standards or minor imperfections.
“RE: Lunch” is our way of giving such ingredients a new purpose by sourcing them directly from producers and transforming them into a thoughtfully crafted lunch menu.
Continuing from last time, we will be serving our green macaroni gratin, made with organic komatsuna greens layered with the rich flavors of meat trimmings from our kitchen preparations.
We finish the dish with the lightly toasted ends of our house-made bread—normally not offered to guests but always well-loved.
