RE: Lunch — A Delicious Way to Reduce Food Waste
In recent years, we’ve become more aware of food loss—perfectly edible produce that, for various reasons, doesn’t make it to market.
“RE: Lunch” is a project built around the idea of giving such ingredients a second life by sourcing them directly from producers and turning them into thoughtful, seasonal lunch dishes.
This time, we’re bringing back a nostalgic favorite:
Chilled Curry with Organic Komatsuna (Japanese Mustard Spinach) – a dish inspired by a summer “makanai” (staff meal) the chef often prepared during his training years.
We use tender, young komatsuna thinned out during the growing process—an ingredient often overlooked, yet full of flavor.
