Food waste, especially ingredients that are perfectly edible but cannot be shipped,
has become a familiar issue in recent years. “RE: Lunch” is a concept that aims to address this by sourcing such ingredients directly from producers and turning them into delicious
lunch dishes.
This time’s menu features a nostalgic “Chilled Curry,” a summer dish that our chef fondly
remembers from his training days. It makes full use of organically grown baby komatsuna
(Japanese mustard spinach) that would otherwise be discarded.
