Food loss, such as perfectly edible produce that doesn’t meet market standards, has become a familiar issue
in recent years. With that in mind, “RE: Lunch” was born—a concept centered on sourcing such ingredients
directly from producers and transforming them into delicious lunch menus.
This time, we’ve created a special soup featuring outer leaves of komatsuna (Japanese mustard spinach),
which are often removed during thinning. Wrapped in a flaky, golden pastry,
this hearty soup is enriched with flavorful offcuts of meat and seasonal root vegetables.
Paying homage to a legendary dish crafted by a French culinary master,
we prepare each serving with utmost care and attention.
