Food loss of edible but unsellable ingredients has become a familiar topic in recent years.
The concept of “RE: Lunch” (Re:cycle) revolves around sourcing such ingredients directly from producers and turning them into lunch menu items.
This time, following up on our previous effort, we have prepared a fluffy and creamy “staff meal” omelet rice made with plenty of outer leaves of komatsuna greens, which are often thinned out and discarded.
The dish is topped generously with a sauce made from mushroom scraps from restaurant preparations and
irregularly shaped tomatoes.
