RE: Lunch was held on September 25 (Wed.)
Food loss is a familiar topic these days, as we hear about food that cannot be shipped even though it is edible. The concept of “RE: Lunch” is to purchase such ingredients directly from producers and turn them into lunch menus.
This is the fourth RE: Lunch held on the last Wednesday of every month.
This time, we prepared a cold Genovese with komatsuna, which was very popular again last time.
By the time we opened at 12:00, the restaurant was fully booked, making for a lively business.
The weather was mild and pleasant, so we hope that customers who waited in line were able to wait without
breaking a sweat.
In addition to serving dishes made with komatsuna, we also sold the outer leaves of the thinned
komatsuna plants, and some customers asked Chef Kuninaga how to cook them, making the event seem like a cooking class.
The next event is scheduled for Wednesday, October 23.
